Easter Sunday Brunch

April is here! Can you believe how fast the year is flying? Thursday I’m 25 weeks pregnant, which makes me realize I’m getting closer and closer to my due date. Eek! I need to start planning for the baby’s arrival (I’m feeling a little behind schedule). But for today I’m thinking about Easter Sunday, and our menu plans (of course the preggo girl is thinking about food).

Whether you decide to bake or takeout this Easter Sunday, I’ve outlined a simple brunch menu for your holiday celebration. Typically, when planning a menu for guests, my eyes are bigger than my stomach. It’s easy to go overboard with food preparation only to leave behind a fridge stocked full of leftovers. This year I’m opting for a simple, yet tasty brunch menu which I outline below.

Given the significance behind the redemptive  Easter holiday, a cheery yellow hue seems like an appropriate color-scheme for an Easter tablescape. Sur La Table is having a 30%-off sale on a few spring items, including these lemon place-mats, napkin rings, and plates. Although I don’t own a lot of yellow-themed kitchen or dinnerware I couldn’t resist a bright pop of color. We’re still solidifying our Sunday plans, but I’m looking forward to gathering with our church family and neighborhood friends.

As I think ahead to what we will eat, a few ideas come to mind. Admittedly, I don’t plan on cooking everything myself; on occasion, I’ll buy prepared foods or desserts, especially when strapped for time and energy. Whole Foods offers a tasty variety of freshly baked goods which serves as an easy alternative to baking. On that note, I picked-up delicious blueberry scones (seen in photos)  from the market this week—these, topped-off with a fig preserve, make for a mouth-watering first course.

Deviled eggs are always a crowd favorite, and the perfect finger food option for hors d’oeuvres. Even though I’m not a fan of mayonnaise (a staple ingredient in deviled eggs), I found a few unique recipes for a twist to the classic deviled egg—including one with avocado (linked below). For dessert I plan on making sweet, yet slightly tart Lemon Bars, which are perfect Spring treats (can you see a yellow theme happening here?). The Pioneer Woman has a great recipe I want to try; plus, I just love her southern-style cooking!
